What on earth will I eat for breakfast!

One of the things I'm most worried about with this whole30 thing is breakfast. I am totally a creature of habit when it comes to breakfast. I know how long it takes to make what I like and I vary only slightly from day to day. But on this new plan, no bread, no tortillas, no cheese, no dairy, no white potatoes... so that eliminates toast, tortillas, smoothies and my usual hash browns.

Today's breakfast (see below) was very successful. I really enjoyed it and felt good after eating it. But I spent much longer cooking it than I want to spend on breakfast on workdays. So I had read a suggestion about pre-cooking things on the weekend that I can then warm up and have with eggs during the week. Above is my first attempt: spinach, onions, mushrooms and red bell pepper. I've already nibbled some of it, which may be the flaw in my plan... who's to say there will be any left on Monday morning?

  1. Let me get this straight...the flaw is that you might enjoy the food? Wow, pass me a serving of that flaw, Babycakes. mmm, cakes...er...dang.

  2. Yum. Breakfast was one of the most fun parts for me. One of my favorites is apples and turkey with cinnamon. But yours looks pretty good, I think I'll try that :-)
